Welcome back to Craig's custom cooking today. I'm going to make Chinese sweet and sour ribs. Let me readjust the camera and I'll show you the process.
First, I add two pounds of pork ribs to a pan of cold water and bring it to a boil. After blanching for two to three minutes, I run them under warm water.
Next, I melt rock sugar in avocado oil until it turns dark red. Then I add the ribs, coating them with the oil and sugar mixture. I also add light soy sauce, cooking wine, black vinegar, and dark soy sauce. I let it cook for two to three minutes.
Then, I add water just to cover the ribs and add star anise, ginger, garlic, and green onions. I simmer it for 50 minutes, stirring occasionally. After removing the ginger and anise, I let the sauce thicken and coat the ribs.
Finally, I plate the sweet and sour spare ribs and enjoy them with asparagus and mushrooms. The ribs are tender and flavorful. It was a successful attempt at making this dish.
